Pie Crust

Well it is really summer where I live. Normally we are in 100 degree temperature by middle of June (no I’m not in Arizona, but close) but this year it’s been cooler and so I’ve been able to continue baking. However, I did this pie crust the other day and the oven heated up my house so much I was miserable. So… posts until the temperature go down might be sparingly.

But keeping with the summer theme I wanted a fruit tart. So I decided to make a pie crust. I had never made a Gluten-Free crust before and I had heard it is quite hard. My local bakery I eat at does not do them and they do almost everything, so it made me wonder if it was possible. TO THE INTERNET!

I found several recipes but the one that looked the best was this one that used sour cream. It is from the blog Gluten Free on a Shoestring and it ended up working quite well. The original recipe makes a 10 inch pie crust. I like mine really thin, so it ended up making, 2 6-inch crusts and allowed me to roll 8 hot dogs to make pigs in the blanket.

To me, it was a pretty straight forward recipe. The only thing I did not do that the original stated was flatten the butter with my hands. I had never done this before in making pie crust, I always mashed it with my whisk or in a food processor. Which is what I did in this instance. Also, my house was so hot at the time, it did not need the heat from my hand.
One tip I will say it it really does need to be ice water. I put a 1/2 a cup in the freezer and let it get cold before I made the dough.

On rolling it out. It is really sticky at first and it will crack. I almost cried thinking I had done something wrong. But as I continued to roll it out and fold it up, it stopped being sticky and did not crack. In the end it looked and felt like normal pie crust I used to buy from the store pre-made.

I ended up making a fruit tart and a quiche with my 2 6-inch crusts. Both were delicious. So I highly suggest if you are needing a pie crust, to use this recipe.

Pie Crust

Ingredents

  • 1 1/2 cups all purpose Gluten-free flour
  • 3/4 teaspoon xanthan gum (omit if flour blend includes it, read ingredients 😉 not all say it right on the front)
  • 1/4 teaspoon Gluten-free baking powder
  • 1/2 teaspoon kosher salt
  • 6 tablespoons of very cold unsalted butter, cut into small chunks
  • 1/2 cup natural sour cream, cold
  • ice water (will add a tablespoon at a time, I chilled 1/2 a cup which was more than plenty)

Instructions

  • Dough
    • In a large bowl whisk flour, xanthan gum (if using), baking powder and salt. Add the small chunks of butter and toss to coat in the dry ingredients.Take whisk grind butter until it is flattened into mixtureAdd sour cream and mix until the dry ingredients are moistenedAdd a Tablespoon of water and mix into dough with hands. Repeat until a dough ball forms. (Took about 3 Tablespoons for me)Chill for 45 minutes
  • Rolling out
    • Place chilled dough on floured surface and taking a floured rolling pin start rolling out the dough to about a 8 inch round piece.
    • Fold dough to make a square and repeat rolling out dough. This step will need to be completed until not sticky about 4 times.
      Note: It may crack and also stick to the surface even with flour. Making folding it into a square impossible. That is okay. Just ball it up again and roll it out.
    • After it is less sticky and not cracking, it is ready for making whatever you choose.
      Roll out to desired width and depth and follow your pie recipe from here on out.

My favorite… Rice Crispy Treats

However it didn’t go so well…

My bestie and I couldn’t get together for a week, so I went rogue and tried to make something I used to love… Rice Crispy Treats. What is funny about this is I hate marshmallows, which is one of the main ingredients of rice crispy treats. However, when they are mixed with the snap, crackle, and pop I love them.

Now I can’t have normal rice crispy treats for 2 reasons. The normal rice crispy treat cereal has a vitamin I’m allergic to (or my body can’t process, however you want to put it) and marshmallows are all sugar (something I have been told to avoid as much as possible). Even the Gluten-Free ones they sell in the store have way to much sugar for me to handle. So, alas, I haven’t had my favorite treat in 2 1/2 years. I decided that had to change.

First step, find sugar free marshmallow recipe. Second step, find gluten-free rice crispy cereal and ensure the vitamin has not been added. I was able to do both, now to get started.

Now I did the marshmallow recipe pretty close to how it was written. Which I got from Wholesome Yum: Sugar-Free Marshmallow Recipe without Corn Syrup. I’ve made homemade marshmallows before to use in rice crispy treats. I was fairly confident in my marshmallow making abilities. Which they didn’t fail me.

I used my electric mixer. Because as much as I love holding a hand mixer for 15 minutes over a bowl while it becomes light and fluffy, I had other things I could be doing. Now it is no joke that the volume will double, as the recipe says. There were a few times I worried my bowl wasn’t going to be large enough and it would spill over. Luckily, it didn’t and it tasted like marshmallows.

Now I’ve done this before… made homemade marshmallow fluff and putting it into the rice cereal almost immediately after. I’ve never had to let the marshmallows set and then melt again. So I let it harden in the fridge just enough to have the consistency I wanted and mixed it with my box of organic brown rice cereal. Then I let it set overnight (mainly because it was 10pm at night and I fell asleep).

This is just the one I used. I don’t like how they lightly sweetened it. I know others who do. It’s a personal preference.

What did work… well they looked like rice crispy treats. The marshmallow fluff tasted fine before I mixed it with the rice cereal.
What didn’t work… the taste after I mixed it all together. I am sure it was the cereal and will try this again with a different brand. I had a coworker try it and she agreed, that cereal was the issue. I know different areas have different options. I will most likely go to Whole Foods and see what they have. I just went to my local grocery store who sells health foods, probably wasn’t the best idea.

But if you want a good marshmallow fluff recipe and have a favorite rice cereal you like to eat. I say give this a try.

Rice Cripsy Treats

Ingredients

  • 2 Tbsp Gelatin (2 pouches)
  • 1 cup water (warm, divided)
  • 1 1/2 cup powdered erythritol
  • 1/2 tsp Vanilla liquid Stevia
  • 1/4 tsp sea salt
  • 2 tsp Vanilla extract
  • 1 box gluten free rice cereal

Instructions

  • Pour 1/2 cup warm water into the bowl of your electric mixer (or a large bowl if using a hand mixer). Sprinkle gelatin over the water and whisk immediately. Set aside.
  • Meanwhile, add remaining 1/2 cup water, powdered erythritol, stevia, and sea salt to a large saucepan. Heat over low to medium heat for a few minutes, stirring frequently, until the mixture is hot, but not boiling, and sweetener dissolves. You will know when this happens because the color will go from a white to translucent. If the sides start to bubble, take it off the heat immediately.
  • Remove from heat. Stir in vanilla extract. Pour the hot liquid into the bowl with gelatin, while whisking constantly.
  • Using your electric mixer (or hand mixer) on high power, beat the mixture for 12 – 15 minutes, until the volume doubles and the mixture looks very fluffy, like stiff egg white peaks.
  • 2 options:
    • Put the marshmallow mixture into the fridge and let set until it is marshmallow fluff consistency. About 45 minutes.
    • Or immediately move onto making the treats, while the mixture is still a little warm.
  • Take parchment paper and line 8×8 pan or a 9×13 jelly roll pan
  • Pour the rice cereal into a large bowl.
  • Take the entire marshmallow mixture and mix into the rice cereal.
  • Flatten out the rice mixture into the pan chosen until they resemble treats
  • Let set for at least 3 – 4 hours or over night.
